Abstract: The article is devoted to the issue of using membrane processes in the processing of dairy raw materials in order to create resource-saving technologies and to improve technical equipment for the production of concentrates from secondary dairy products. The application of membrane technologies in the dairy industry is analyzed. The results of analytical research concerning the possibility of producing dairy products from secondary raw materials with the use of ultrafiltration at the food industry along with the production of traditional whole milk products are presented.
